I was given a bunch of "donut" Persimmons several weeks ago.
They were hard as a rock and I ran out of patience waiting for them to ripen.
So I got to thinking.. Why not microwave them and turn them into pulp..???
I cored them, used my potato peeler to get the skin off, cut them into quarters...
Dumped them into a microwave bowl, added some water and nuked them for 3 minutes......
Wahlaa .... smashed them with my potato masher, let it cool and there you go...
Pulp...
I made banana bread using a yellow cake mix, 1 egg, mashed 1 1/2 banana (that's all the banana I had) and about 2 cups of the persimmon pulp.
Stirred until every thing was mixed completely..batter was sort of stiff.
Poured it into a greased bread pan Baked for about 40 minutes at 350F.
This is the beauty that came out.
Yummy, moist, not too sweet....just perfect!!!
Wish you could have a slice and a cuppa with me...😊

I could not eat this but I would if I could, never even heard of the fact you can cook persimmons. i tasted one when a child and never touched another. it looks delish and bet the smell was devine

Well aren't you Miss Clever!! I love whar you did. How creative, the microwave. someome on Joyce's fb recomended freezing and defrosting to ripen them. But I like the microwave solution better. The bread looks delicious.
