I had several bloggers ask me what I was going to do with the apricots from my neighbor's tree.
Well,
I made them into a pie...
They were beginning to get a bit mushy from the extreme heat we have been having.
Once I started to think about pie...that's all I could think about 😁
So,
Here are the results...
Dave and I had a small piece last night...
It was absolutely divine...
A wonderful pie but not so wonderful for my diet.
Fresh fruit can sure be a downfall.
Just to let you know... yesterday the temperature was 110F at 6 PM
I wilted !!
Today it promises to "Cool Down" to 105F.
The AC is already cranking out some cooler air.

Your pie is beautiful! But I can't imagine how you could bake it when it was so hot! Maybe a toaster oven? I sure hope it cools down there soon!

I have never had appricot pie but I love all fruit pies and cobblers, and this one is lookig divine. a great idea. our AC is kicking on and off like crazy. the humidity can be worn as though it is a cloak
That pie looks wonderful. I have never had apricot pie. Peach, yes and I love it, so I'm sure I would love this.

I am so glad you took my advice and made a pie with the apricots, it looks absolutely gorgeous. I rarely see fresh apricots, I don't think the trees grow around here. Anyway I'll swap you a slice of that yummy pie for a jar of the strawberry jam that I made today! Deal?
oooops forgot to comment on your heat. If it was 110F at 6pm, how hot was it during the day? I've never been in heat like that. I was in 100F in Israel and also in Australia, but 110 is a bit much! I hope it cools down for you ASAP.
Apricot is my all time favorite pie!!! I bought some fresh apricots at Sam's but I am at the ranch so I won't be baking a pie.....unless I use Sherry's kitchen....now that's an idea!

I drooled over the "picture perfect pie," but the final image looked so scrumptious I bet my blood sugar spiked!! YUM.
